                                    The crew from Shaver-Hill Farm in New York is back to share their expertise in  maple confections with hands on demonstration making Maple Candy,  Granulated Maple Sugar, and again this year, Maple Coated Nuts. 
                                                 -Hosted in the Cafeteria at the back of the building

                                    (Ongoing throughout the rest of the day) – See our Leader Wood Fired Evaporators, Leader Oil Fired Evaporators up and running on the back patio.

10:45 – 11:00 am  Steve Childs, Maple Specialist - Cornell University

                                    What makes for good maple flavor? What are the keys to high yields?  Steve shares his latest research on maple flavors and what it takes to achieve high productivity while maximizing taphole sanitation year after year.                                                                                                                        -Hosted in Conference Room

12:30 - 1:30 pm     Mark Isselhardt, Maple Specialist, UVM Extension **Friday Only**

                                    What is the impact on sap production when you tap into an old wound?  With tubing systems, it is almost impossible to know for sure.  Mark will cover preliminary sap yield data from clean tap holes versus holes that hit brown wood and reduced sap yields from tapping into stained wood.

                                    A panel of industry experts will discuss the health and future of the maple industry.

1:45 – 2:45 pm       Mike Kenny, Sweeter Creations – Bourbon Barrel Aged Maple Sugar

                                    Mike and Debra Kenny have been making maple syrup and confections for 20 plus years in the town of Waddington in upstate New York.  The Kenny’s produce maple syrup, maple cream, maple sugar, and other maple confections.  During the last 5 years Mike started aging maple syrup in Bourbon barrels.  Mike will be demonstrating his new product, Bourbon Barrel aged maple sugar!
