Our stainless steel scoops are made from the same top quality material as our evaporator pans and are constructed using the lastest tig welding technology.  They have a flat bottom with a handle at 45 degrees so you can down to the bottom of the pan without burning your hand.  That flat bottom design also helps when you want to dip the scoop to see the sheeting action of the syrup, carefully slide the scoop through the syrup, stop, then reverse your motion to pull the scoop out.  This will reduce the amount of mixing that occurs when tools such as scoops and skimmers are used in pans.
